Ingredients

Scale

2 cups rolled oats

1 cup creamy natural peanut butter (or seed butter)

1/3 cup maple syrup or honey

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts, seeds, or dried fruit (optional)

Parchment paper for lining

Instructions

1. Line an 8×8-inch pan with parchment paper for easy removal.

2. Warm the nut butter slightly if needed for easy mixing.

3. In a large bowl, stir together nut butter and sweetener until smooth and fully combined.

4. Add the rolled oats and any mix-ins like chocolate chips or dried fruit. Stir until evenly coated.

5. Press the mixture firmly and evenly into the lined pan.

6. Freeze for at least 1 hour until firm.

7. Lift out with parchment, slice into bars, and store in an airtight freezer-safe container with parchment between layers.

Notes

For nut-free variations, use sunflower seed butter or tahini.

Add cocoa powder for a chocolate version.

Adjust texture with more oats for firmness or extra nut butter for softness.

Bars stay fresh in the freezer for up to 3 months.

Let sit at room temperature for 5–10 minutes for a chewier bite.
