A creamy, no-bake dessert layered with graham crackers, whipped lemon cream, and fresh berries. Inspired by Pioneer Woman’s recipe.
12 graham cracker sheets
2 cups whipped cream or topping
1/2 cup lemon curd
1 tsp vanilla extract
2 cups mixed fresh berries
Zest of 1 lemon
Optional: strawberry jam, mint for garnish
1. Spread a layer of whipped cream in the bottom of the dish.
2. Place graham crackers in a single layer.
3. Top with lemon curd, whipped cream, and berries.
4. Repeat layers until dish is full, ending with cream and berries.
5. Cover and chill for at least 6 hours or overnight.
6. Slice with warm knife and serve cold.
Use dry berries to prevent soggy layers.
Chill overnight for best results.
Add zest or jam for extra flavor.
