Ingredients

Scale

2 cups rolled oats

1 cup creamy natural peanut butter (or almond butter)

1/3 cup maple syrup or honey

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

1/4 cup dried cranberries or raisins (optional)

Parchment paper for lining

Instructions

1. Line a baking sheet with parchment paper.

2. Warm the nut butter slightly if needed for easy mixing.

3. In a large bowl, stir together nut butter and maple syrup until smooth.

4. Add rolled oats and any mix-ins like chocolate chips, nuts, or dried fruit. Stir until well combined.

5. Scoop out small portions and roll them into balls with lightly damp hands.

6. Place the formed bites on the parchment-lined tray.

7. Freeze for at least 30 minutes until firm.

8. Transfer to an airtight container or freezer bag, layering with parchment to prevent sticking.

Notes

For nut-free versions, use sunflower seed butter.

Add cocoa powder for a chocolate variation.

Adjust texture by adding extra oats for firmer bites or more nut butter for softer ones.

Energy bites keep in the freezer for up to 3 months.

Let sit at room temperature for 5–10 minutes before serving if you prefer a softer texture.
