Ingredients

1 cup rolled oats

1/2 cup almonds or sunflower seeds

8 medjool dates, pitted

1 1/4 cups soaked cashews

3/4 cup full-fat coconut cream

1/4 cup maple syrup

2 tablespoons lemon juice

1 teaspoon vanilla extract

Fresh fruit or jam for topping

Instructions

1. Blend oats, almonds, and dates into a sticky crust

2. Press 2 tablespoons of crust into the bottom of each small jar

3. Blend soaked cashews, coconut cream, maple syrup, lemon juice, and vanilla until smooth

4. Spoon 3 tablespoons of filling over the crust in each jar

5. Add fruit or jam on top

6. Chill for at least 2 hours before serving

Notes

Store in the fridge for up to 4 days

Customize toppings with chocolate, nuts, or seasonal fruit

Use 4–6 oz jars for the best single-serve portions
